Had some duck fajitas over in Mississippi. Never occurred to me to cook them that way but it's delicious. Far as I know they cooked them just like you would any other fajitas, just not as long.

Had Goose Fajitas last night.
Marinade in OJ, cilantro- Fresh, Cumin, Garlic and Lime juice.
More OJ than lime juice.
Grill until medium or cast iron skillet with peppers and onions. Set the vegies aside and keep warm.
Then slice against the grain put in oven with salsa and or Fajita mix with lid for about 1-2 hours until tender.
Taste like beef. Add cilantro rice and some black beans.
