Is the photo fooling me????.... or are those duck slices pretty RARE ???
Now, I usually cook my ducks pretty rare (keeps the meat moist, and you don't lose the natural flavor), but most of the "professional" recipes have you cook them till they look like the tounge( or tongue) of a boot.

The "link" says to use small ducks, but their photo looks like Gaddies or mallards.

I used a pair of gadwalls. Really, most of the breast ended up cooked more than I wanted, but that one part that you see at the front turned out nice and rare.
