 Post subject: Duck Pizza

I used woodduck this past time.

About 4 (small) duck breast fillets. Slice across the grain then slice the pieces into small cubes. Place in a ziplock bag with olive oil, a little salt and pepper, italian seasoning (like regular pizza spices), and some minced garlic. Mix well and place in frige for 1 hour.

Dice up some red onion and slice some mushrooms. Sautee in olive on medium-high heat for 3-4 minutes then set aside. Cook duck until just the outside is brown (maybe 3 minutes).

Lightly spread olive oil on pizza crust, layer shredded mozzarella on crust then onions/mushrooms/duck. Then cover with more mozzarella. I use about 8 oz of cheese total.

Cook on a baking stone at 425-450 for 10-12 minutes. Use lump charcoal for best taste.

I love chicken pizza - never thought about a duck pizza.
Good thing I've still got some in the freezer.
